Stacy’s Cookies has recently expanded the product line to include several different types of homestyle cookies and snacks of the non-protein variety.

I’m happy to say that Murchie’s Tea & Coffee carries this line of snack cookies to pair with your afternoon tea or coffee. They are rich and decadent made only with real butter and all natural ingredients. They’re made locally in Langley in small batches, stop in to a Murchie’s near you to give one a try. The Willowbrook and Semiahmoo locations carry most of the products listed below, the other locations have limited selection. None are available in the Victoria location.

Cookie Varieties

The types a currently available are Lemon Clouds, Ginger Bends, Peanut Butter, Cinnamon Coffee and Chocolate Chip. These recipes have all been created myself and are unique to other cookies out there.

These are some of my tried and true recipes that I’ve been making for years for catering and café service. These are cookies that you’d pack in bag lunches or serve on a platter at a get together or just to have around the house for snacking. They’re made with 100% butter and always with high quality, all natural ingredients…as all of my products are.

Lemon Cloud CookieLemon Clouds – These are a light and fluffy lemon cookie made with fresh squeezed lemon juice and freshly grated zest. It’s the perfect cookie for those who want something different and refreshing. There is no food colouring added to this product, all of the yellow colour comes from the freshly squeezed lemon juice, grated lemon zest and the eggs. Ingredients: White flour, butter, white sugar, eggs, fresh squeezed lemon juice, freshly grated lemon zest, baking powder, Himalayan pink salt.

Ginger Bend CookieGinger Bends – These were originally intended to be ginger snaps but they kept turning out soft and chewy, so they became known as Ginger Bends. They have just the right balance of sweetness and punchy molasses that makes them not bitter and perfect for tea time. Ingredients: White flour, butter, white sugar, eggs, molasses, ginger, baking soda, cinnamon, cloves, Himalayan pink salt.

Chocolate Chip CookieChocolate Chip – This is a traditional chocolate chip cookie made with a recipe that is designed to keep the cookies soft and chewy longer than most. Not too sweet. Now made with 50% more dark chocolate chips. Ingredients: White flour, butter, white sugar, brown sugar, dark chocolate chips, eggs, baking soda, Himalayan pink salt.

Peanut Butter Cookie

Peanut Butter – These are similar to a traditional peanut butter cookie but these are also made to stay a little bit soft and chewy inside, not your typical peanut butter cookie. They will always have the familiar cross hatch design on the top to indicate that it is peanut butter. Ingredients: White flour, white sugar, brown sugar, butter, crunchy peanut butter, peanut butter chips, eggs, baking soda.

Cinnamon Coffee CookieCinnamon Coffee – This one is reminiscent of a snickerdoodle cookie in appearance. It’s simple and a little bit sweet with a subtle background flavour of coffee and a good punch of cinnamon and spice. Ingredients: White flour, white sugar, brown sugar, butter, eggs, cinnamon, coffee, baking soda, Himalayan pink salt, nutmeg, baking powder, cloves.

Pumpkin Spice – This is an original flavour from Stacy. It’s soft and chewy and has been made with real creamery butter that’s been infused with Murchie’s own Pumpkin Spice tea. It has more of a brownie texture inside rather than a cookie. It has real pumpkin puree in it as well. Even people who don’t like pumpkin, like this cookie. Ingredients: White flour, butter, white sugar, light brown sugar, pumpkin puree, egg yolks, vanilla, cream of tartar, pumpkin spice, cinnamon, baking soda, Himalayan pink salt

Bars & Squares

These are even more decadent than the cookies and the bars and squares are a more elegant dessert for those important occasions when you want something a little more showy. They are sold in a 2 ½” square and can be cut and made into a platter of bite size pieces.

Nanaimo Bars: These are the traditional Nanaimo bar named after the City of Nanaimo, but made with Stacy’s touch. They’re sweet and delicious and made with a chocolate graham crumb base and layered with a sweet, creamy custard filling topped with a thin dark chocolate top using pure Callebaut Belgian chocolate.

Ingredients: Bottom: Graham crumbs, sweetened flaked coconut, butter, ground almond, cocoa powder, white sugar, egg. Middle: Icing sugar, butter, custard powder, cream. Top: Dark Callebaut chocolate, butter.

Blueberry Cinnamon Coffee Cake: This is a light, soft and very moist coffee cake. Its predominant flavour is cinnamon along with a lot of delicious blueberries throughout. The sour cream that’s incorporated into it helps to create the moisture and tender texture. The sweet cinnamon sugar topping is also used to create a layer in the middle which is what creates the pattern among the blueberries. 

Ingredients: Cake: White flour, blueberries, white sugar, sour cream, butter, eggs, sunflower oil, baking soda, baking powder. Topping: Brown sugar, yellow sugar, ground almond, cinnamon.

Double Chocolate Banana Bread: This one is for those who really love chocolate! It’s a double kick of rich dark chocolate and chocolate chips with the added flavour of banana. These individual mini loaves are a soft, moist chocolate cake with dark chocolate chips and they incorporate only organic bananas. These taste even better when served with butter. Topped with a touch of white sugar.

Ingredients: White flour, white sugar, organic bananas, dark chocolate chips, butter, sour cream, eggs, light cream, cocoa powder, baking powder, baking soda, vanilla, Himalayan pink salt.

Lemon Square: These are smooth, light, tangy and very lemony! The creamy lemon filling sits on top of a pure butter shortbread crust infused with freshly grated lemon zest. Each one is garnished with icing sugar and little pieces of candied lemon peel. The candied lemon peel is made fresh and dried in-house.

Ingredients: Shortbread base: White flour, butter, white sugar, Himalayan pink salt, freshly grated lemon zest. Filling: Eggs, white sugar, freshly squeezed lemon juice, white flour. Topping: Donut sugar (which is icing sugar mixed with a bit of cornstarch so it doesn’t melt and disappear). Candied lemon peel: lemon peel, sugar.

Mint Nanaimo Bar: These are the same traditional Nanaimo bar that’s already created by Stacy except it’s had pure peppermint oil added. They’re sweet and delicious and made with a chocolate graham crumb base that’s been infused with pure peppermint oil. The middle is a layer of sweet, creamy custard filling with a dab of green food colouring. The top layer is pure dark Callebaut chocolate that has pure peppermint oil added to it.

Ingredients: Bottom: Graham crumbs, sweetened flaked coconut, butter, ground almond, cocoa powder, white sugar, egg, peppermint oil. Middle: Icing sugar, butter, custard powder, cream, green food colouring. Top: Dark Callebaut chocolate, butter, peppermint oil.

Apple Cinnamon Coffee Cake: This is a light, soft and very moist coffee cake. Its predominant flavour is cinnamon along with chopped Granny Smith apples and additional cinnamon chips throughout. The sour cream helps to create the moisture and tender texture. The sweet cinnamon sugar topping is also used to create a layer in the middle which is what creates the pattern among the apples.

Ingredients: Cake: White flour, granny smith apples, white sugar, sour cream, butter, cinnamon chips, eggs, sunflower oil, baking soda, baking powder. Topping: Brown sugar, yellow sugar, ground almond, cinnamon.

Lemon Poppyseed Mini Bundt Cakes:  These are light and airy super cute, mini lemon poppyseed bundtlette cakes. (Bundtlette is the name of the shape of the pan they’re baked in).

Each one is made with freshly squeezed lemon juice and freshly grated lemon zest. The crunch of the poppyseeds are a delicious feature that sets them apart from the other lemon loaves and desserts. They are topped with a sweet lemon juice and icing sugar frosting.

Ingredients: Cake flour, sugar, butter, eggs, cream, canola oil, lemon juice, lemon zest, poppyseeds, baking powder, baking soda, Himalayan pink salt. Icing: Lemon juice and icing sugar.

Muffins

Cranberry Lemon Muffins: This is a bright and lemony muffin with a fluffy texture that’s loaded with fresh cranberries. It’s made with freshly grated lemon zest and freshly squeezed lemon juice. They are glazed with a sweet lemony icing that perfectly matches the tartness of the cranberries. This muffin will wake up your taste buds!

Ingredients: Flour, cranberries, cake flour, sugar, yellow sugar, canola oil, butter, milk, freshly squeezed lemon juice, eggs, baking powder, Himalayan pink salt, cinnamon, vanilla, freshly grated lemon zest. Icing: Lemon juice and icing sugar.

Cranberry Blueberry Bran Muffin: This is a traditional bran muffin with a soft moist texture. It’s loaded with cranberries and blueberries which add a delicious pop of flavour along with the healthy qualities of the bran.

Ingredients: Wheat bran, flour, whole wheat flour, cranberries, blueberries, buttermilk, brown sugar, canola oil, eggs, sour cream, butter, vanilla, baking powder, baking soda, Himalayan pink salt, cinnamon, allspice, nutmeg.

Morning Glory Muffin:  This is a perfect mid-morning snack. This one has a soft and very moist texture. It has a carrot cake feel to it but with a subtle flavour of orange with added apple, raisins and crushed pecans. Each one is topped with pepitas (pumpkin seeds) for a little added flavour and protein.

It’s sweetened with honey and apple sauce with a touch of freshly grated orange zest. This product contains pecans.

Ingredients: Whole wheat flour, carrots, apple, brown sugar, raisins, pecans, eggs, orange juice, canola oil, apple sauce, honey, ground flax, baking soda, baking powder, cinnamon, Himalayan pink salt, ginger, vanilla, freshly grated orange zest, pepitas.

 

Savoury

Pepperoni Pizza Bun:  This is a unique savoury take on a cinnamon bun style snack. It’s made with a soft white bread dough, that’s been generously covered with a single layer each of butter, tomato paste, pepperoni slices, cheese and spices.

It’s then rolled up, sliced, topped with a dab of pizza sauce and cheddar cheese and then it’s baked to deliciousness. It’s a compact pizza without the mess. It’s best eaten a little bit warm, I recommend microwaving it for 25 seconds.

Ingredients: Bread dough: white flour, white sugar, canola oil, eggs, yeast, Himalayan pink salt. Filling: butter, organic tomato paste, pepperoni, cheddar cheese, basil and oregano. Topping: pizza sauce, cheese.
